Sweet Potato Brownies (vegan, gluten-free, dairy-free)
Here’s a sweet treat to get you through the mid-week slump (without the guilt factor)…
So you’re probably thinking how can a vegetable be turned into a brownie and possibly taste good?!
I promise you this recipe is insanely delicious!! These are the sweetest, gooiest, most chocolatey brownies ever! And the best part – it’s made from completely natural, unrefined, unprocessed ingredients, as well as being dairy-free, gluten-free and refined sugar-free! So yes they’re actually good for you… as long as you can resist the temptation to eat the whole bowl in one sitting!!
Each serving also contains lots of wonderful fibre, which gives the brownie a ‘slow burning’ quality – so unlike traditional brownies which are full of sugar and highly refined ingredients, these brownies will allow you to feel fuller, more energised and satisfied for a lot longer!
So what are some of my secret ingredients that makes these brownies burst with so much nutritional goodness?
- Sweet Potatoes – ticks so many vitamin and mineral boxes, including vitamin B6, vitamin A (antioxidant), vitamin C (the healing vitamin and protects the body from toxins), vitamin D (provides energy and helps build healthy bones, nerves, skin and teeth), iron (supports proper immune function and replenishes white and red blood cell production – important if you have been on medication for a long period of time) and magnesium (the relaxation and stress mineral)… need I say more!
- Cacao – known as the “food of the gods” this is high on my list of favourite superfoods! The cacao bean is the purest, most unrefined version of chocolate and is super high in antioxidants, minerals and overall-health giving qualities – without all of the sugar, dairy and chemicals in common chocolate. Just ask my favourite raw foodie David “Avocado Noni Cacao” Wolfe 🙂
- Dates – so much goodness in this sweet fruit including fibre, calcium, protein, sulfur, iron, potassium, phosphorous, manganese, copper and magnesium which are all beneficial for health.
- Coconut Oil – I am nuts for coconuts and all coconut related ingredients. Coconut oil is one of the most versatile oils and perfect for cooking with as it’s a medium-chain saturated fatty acid which doesn’t oxidise and create free radicals at high temperatures. It’s a healthy form saturated fat that helps ease digestion, hydrates the skin and boosts your metabolism. Winner!
- 1 large (or 2 small/medium) sweet potatoes
- 1 cup almond meal (ground almonds)
- ½ cup buckwheat flour
- 10 medjool dates
- 5 Tbs raw cacao
- 1/3 cup raw macadamias
- 3 Tbps coconut oil (melted)
- 2 Tbps honey
- Pinch of salt
Pre-heat oven to 180 degrees Celsius.
Peel sweet potatoes and cut into chunks. Place them into a steamer for about 20 minutes, or until softened.
Add softened sweet potatoes to food processor, with pitted dates.
Blend to form an ultra-sweet and creamy mixture.
Mix in a large bowl the blended mixture and remaining ingredients. Stir well..
Spread mixture evenly in a lined baking dish.
Cook for 20 minutes, or until you pierce the brownie with a fork and it comes out clean.
Cool in tray before serving. This is important as it needs time to stick together!
Remove brownies from tray and wait a few minutes before you cut into squares.
Enjoy with a side of cashew cream and your favourite cuppa tea 🙂
