Gluten-free ANZAC Biscuits

 

 

Anzac Cookies - Wellness Temple

 

I wasn’t planning on baking Anzac biscuits today, but this rainy weather in Sydney today is just asking for it! So I whipped up these cookies and I must say, the house is smelling pretty wonderful right now! As always these are gluten-free, dairy-free and refined sugar-free – so perfect if you are intolerant to any of these, or are trying to be healthier but don’t want to miss out on life’s sweeter pleasures like Anzac biscuits. Plus, this recipe requires very few ingredients and are so quick and easy to make – you’ll be in and out of the kitchen in 20 mins!

 

INGREDIENTS

1 cup almond meal
½ cup gluten free oats
½ cup desiccated coconut
1 Tbs chia seeds
¼ cup chopped macadamias
¼ cup coconut oil
¼ cup coconut nectar (or substitute with honey, rice malt syrup or maple syrup)
1 organic free-range egg
1 tsp pure vanilla extract
1 tsp baking powder
pinch sea salt

Preheat oven to 160 degrees Celsius.
Mix all dry ingredients in large bowl. Then add wet ingredients and mix together.
Roll tablespoons of the mixture into round balls and flatten into cookies on baking paper.
Bake for 15 mins or until golden brown.
Remove from the oven and allow to cool on the tray (unless you can’t wait like me)! 🙂
