Baked Fig and Apple Crumble
Hello! I have been super busy recently, so haven’t had much time to post on the blog. But thankfully things are finally starting to settle to down, phew! Now I can get back to doing what I love and that is sharing all of my recipes, insights, and other random bits and pieces of information with you. I have developed a few new goodie recipes, which are getting me through this Winter with comfort 🙂
Today’s recipe is for a Baked Fig and Apple Crumble. I have been making this for breakfast almost every day this week and can’t get enough! Yes, breakfast. I know this is traditionally a dessert – but who says you can’t have dessert for breakfast? What I love about this recipe is the delicious combination of apple, figs, cinnamon, oats and quinoa flakes – so when it comes hot out of the oven it really does taste like apple pie. It’s also great because you can swap out the fig and apples for whatever fruit you desire… so feel free to mix it up with some frozen berries, pear, plums, apricots etc. Get creative!
Top with some coconut yoghurt – its deeelish!
½ cup quinoa flakes
½ cup gluten free oats
1 cup almond milk
1 green apple, diced
2 dried figs, chopped
¼ cup walnuts, crushed
1 Tbsp pepitas
2 tsp coconut oil
1 tsp cinnamon
¼ tsp nutmeg
½ tsp vanilla extract
1 tsp baking powder
Preheat oven to 180 degrees. Grease mini casserole dish with coconut oil.
Combine all ingredients (except walnuts and peptias) in a large bowl and mix until well combined.
Pour mixture into casserole dish and top with walnuts and pepitas.
Bake for 30 minutes or until top is golden.
