3 Ingredient Healthy Banana Pancakes

Got ripe bananas? Got eggs? Got flour?

Here is a quick and easy recipe to make some healthy, gluten-free, dairy-free and protein dense pancakes that are really delicious! You actually don’t even need the flour and can just use the eggs and banana (2-ingredient pancakes!!) – but I like the to add coconut flour for the flavour, yes I’m obsessed with all things coconut, and its also high in fibre!



(1 serving = 4 small pancakes)

1 ripe banana

2 eggs

1 Tbsp coconut flour (or any flour of choice)


Optional add-ins:

1 tsp cinnamon

1/4 tsp baking powder (recommended if you want your pancakes fluffier)

1/4 cup blueberries

1 Tbsp cacao nibs


Whisk eggs in bowl.

Add coconut flour and whisk again until combined.

Add chopped banana and mash into mixture (note: it’s ok if there are small chunks of banana – this will make the pancakes fluffy).

Heat non-stick pan on medium-low heat and drop a small amount (2 Tbsp batter) into the pan. Cook pancakes for about 1 minute on each side, or until brown. Note – you can add a small amount of coconut oil to help prevent pancakes from sticking to the pan.

Voila! Serve warm with any topping you like. I have sprinkled on some coconut flakes, honey and bee pollen 🙂
