Healthy Christmas Desserts Part 1: Superfood Chocolate Crackles
Hello lovely readers! Can you believe Christmas is only days away?! I’m in awe of how quickly this year has flown by! I’ve had a very busy last couple of months and I’m so sorry for the lack of posts recently! Needless to say I’m looking forward to a break over this holiday period – can’t wait for some downtime and some much overdue R&R! I also can’t wait to get back in the kitchen and share with you some new findings I’ve discovered recently 🙂
With Christmas only days away now, I’ve been in a mad scramble trying to figure out a menu for Christmas day! I’m usually in charge of desserts (clearly the best pick) and I especially love at this time of year getting really creative and trying out new recipes. But my number one tip if you do decide to try something new is… do a trial run first!! I have some not so fond memories of the attempted pudding I made a few years ago that ended up in broken chunks of cake blended together into a ‘trifle like dessert’… rookie error!!
It’s inevitable at Christmas (in my family at least) that you will over indulge, eat too much and go back for second and thirds (and even fourths)! So over the years I’ve tried to come up with a good selection of healthier desserts that won’t leave you feeling ill at the end of your feast… and dare I say it, are actually good for you!
So the first recipe I want to share with you are these chocolate crackles packed full of healthy ingredients like buckwheat, cacao, coconut oil and dried superfood berries like blueberries and goji berries which are full of antioxidants and great for easing inflammation in the body.
The best part is that these are great for the kids, particularly if they have any nut allergies as they’re nut-free and have no refined sugar so won’t send their blood sugar levels into overdrive! They are the perfect bite size pieces too so you can serve them up at any time of the day! Come to think of it they are great really for anyone with any intolerance as they are – gluten free, dairy free, nut free, refined sugar free, vegan, paleo, raw, vegetarian, soy free and cruelty free! Doesn’t get much better than that.
Cacao butter is the real star of this dessert as it gives the crackles a lovely chocolate flavour and also allows them to keep their form out of the fridge as they have a higher melting point than coconut oil.

(makes approx. 32)
2 cups activated buckwheat (I use Loving Earth Original Buckinis)
1 cup shredded coconut
¾ cup dried mixed berries (e.g. blueberries, cranberries, goji berries, incan berries)
½ cup cacao powder
2 Tbsp cacao nibs
1/3 cup coconut oil
1/3 cup cacao butter
2 Tbsp maple syrup (or other sweetener like coconut sugar, honey or coconut nectar)
Pinch of sea salt
Mix all ingredients in a bowl until combined.
Spoon mixture into mini patty cases and pop into mini muffin tin. (If you don’t have a tin, no problem – they will usually hold in the cases).
Place into the freezer for about 1 hour to set. Remove when ready to serve.
These should keep in the freezer for a couple of months.
