The final instalment of my Healthy Christmas Desserts series is a new favourite recipe of mine! These little apricot and coconut balls of goodness are quick to make, require minimal ingredients and are sooo delicious – they remind me of these apricot bites we had at the school tuckshop when I was younger – 5c a piece! Remember when you could buy things for 5c?!

I recommend that you try to find organic apricots in this recipe as they are sulphur dioxide free (which is an additive that can cause irritation in the gut). I have made these nut-free for anyone with nut allergies, but you can also substitute the oats with almond meal which will also give them a nice little boost of protein! As always these are gluten and dairy free!

I will definitely be making these again as a go-to-snack post-Christmas πŸ™‚

Wellness Temple – Apricot and Coconut Bliss Balls

RECIPE

150g apricots finely diced (approx. 1 cup)

Β½ cup organic oats

6 medjool dates

1 cup desiccated coconut

1 Tbsp tahini

1 Tbsp coconut oil

1 Tbsp honey

2 Tbsp water

Pinch of sea salt

Extra desiccated coconut for rolling

Blend all ingredients in food processor. Tip: add the apricots and dates first to dice into small pieces, then gradually add remaining ingredients.

Scoop 1 Tbsp mixture and roll into a ball, then coat in desiccated coconut.

Repeat with remaining mixture.

Set in fridge for 1-2 hours and then serve.

Keeps in fridge for about 2 weeks (or freezer for a couple of months).
